Spice Marinade
Ingredients
- 2 tsp garlic powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp all spice
- 2 tsp smoked paprika
- 1 tsp onion
- 1 tsp cardamom
- 1/2 tsp clove
- 1/2 tsp cayenne pepper
- 1/2 tsp msg
- 1 Tbsp sugar
- 1.5tsp salt
- 2 Tbsp olive oil
- 1.5 Tbsp lemon juice
- 4 Tbsp white vinegar
- 2 Tbsp tomato paste
- liquid smoke (optional, or use real smoke, see below)
Instructions
- Mix dry ingredients
- Add olive oil, lemon juice and tomato paste
- optionally, add lemon zest
Chicken Prep
Ingredients
- 2 pounds boneless skinless chicken thighs
Instructions
- Slice thighs into little strips
- Marinade overnight
Toum sauce
Ingredients
- 1 full bulb of garlic
- 1 cup neutral oil (corn, canola, vegetable, avocado, grapeseed, sunflower, peanut)
- 4 Tbsp lemon juice
- pinch of salt

- Blend all ingredients together

- Make some frensh friend in the air frier. Goes well in/with Shawarma
Cooking the chicken
Ingredients
- dill relish or sliced pickes
Instructions
- Slice some dill pickles if you don't have dill relish
- Sear the chicken on high heat. Don't crowd the pan. Allow a crust to develop
Final Assembly
Ingredients
- dill relish or sliced pickes
- pomegranite molassses
- french fries
- pitas
- parchment paper
- aluminum foil
Instructions
- Add pita to pan to soak leftover chicken fat, spread toum sauce on pita in pan, add chicken and sliced dill pickles
- Add fries (optional)
- Add pomegranite molassses (optional)
- Wrap pita in parchment paper
- Wrap pita in aluminum foil, heat in pan, slice diagonally
- Serve with Toum
